Oh God, that looks delicious. Sadly, I can't cook ;__; My mother banished me from the kitchen years ago when I dropped some boiling water on my foot and nearly set the house on fire when I left the gas running... But I have an electric stove now! Maybe... It's never too late to learn? I think I can at least master rice...

Is that celery in your stir fry?

MZeroX
January 4th, 2012, 03:48 AM
yeah. i like celery. it may very well be my favorite vegetable. carrots take a close second or tie for first. i consider mushrooms a class of their own, but if you categorize them as vegetables too, then depending on the type of mushroom, it's a tie for first.

anyways, i added them late, so that they stay crisp. they only look soft and browned because the sauce. (yay shitty picture quality!)

nununu
January 4th, 2012, 04:07 AM
Ah, I see.

Hmm... I've recently acquired this habit of using caramelized onions whenever I can get away it, so I can understand wanting to put your favorite vegetable whenever you can. I was just thinking leeks or scallions are more 'stir-fry-like'.

MZeroX
January 4th, 2012, 04:16 AM
well, i did start my sweet chicken with a butter + scallion base to cover the pan, and i let the scallions pretty much lose their shape. then i added oyster mushrooms and a generous helping of hoisin sauce.

i added the chicken skin before the chicken too, so that it'd decompose a little first too (i liked getting cheap food, and you can get on-bone and on-skin chicken for about 79 cents per pound depending on when and where i go; i just debone and skin on my own time). then i added the chicken with some soy sauce to cook and finish the sauce with the chicken in it.
then i added the pickled pepper thin sliced beef chucks. (these were leftovers from a previous meal)

the rice also was made with sweet vinegar, as well as crumbled nori and dried vegetable seasoning. the celery went in a few minutes after the beef. i also figured i'd save my carrots for another occasion, since the nori+dried vegetable seasoning had bits of carrots in it already; nothing great, but i also only have 4 carrots left.

...don't ask me what temperature i cooked it at, i change the temperature as the smell and taste change, as well as new ingredients are added to the pan (basically, i couldn't tell you unless i'm right there next to it making it and you're there next to me).

nununu
January 4th, 2012, 05:25 AM
Ah. When stir-frying, use really high heat. You should cut the meats as thinly as you can so they cook through faster. Heat the oil to near smoke point before you staring dumping stuff in the wok/pan. Cook whatever cooks slower first and keeping them moving(so they stick/burn). Add your sauces and seasonings before the veggies. When using root veggies like carrots, slice them into thin strips if you can, preferably fine julienne. Or the thinnest your mandolin slicer can if you have and use one. You can add your greens and whatever else you want to stay crispy just before you take it off the heat.

At least that's how I do it.

MZeroX
January 4th, 2012, 11:57 AM
yeah, i tend to make things small and cook on high unless i'm trying to get a sauce to form and get thick. which meant a lot of variation since sauce shits went in at different points. either way, the killing of the scallions in butter and the meats got the noisy and intense fire. specific temperatures, shit if i know, since i don't have thermometers.

nununu
January 4th, 2012, 12:57 PM
I advise against using butter in stir-fry. It burns too quickly. Use cooking oil. If shooting for authenticity, peanut oil. And scallions should go in at the end.

If the scallion-butter thing is a personal flavor, prepare it separately and treat it as a sauce.

MZeroX
January 5th, 2012, 12:16 AM
i like letting my shit baste in the sauce. and it really isn't a follow recipe stir fry. this was throw leftover in pan (remember the caption i posted with said nothing about "stir fry"; just kept posting because i needed time for the food to settle before i went to sleep), add more shit to try to make the spice return to spicy territory, instead of pain. since yeah, those leftovers. think about one of those small to-go styrofoam boxes. the small ones. this was how many peppers were in there.

Pumpkin masala!

http://i.imgur.com/pr0k4.jpg

It was quite good, though I fear I slightly under-seasoned it, though not enough that it was bland by any means, it simply lacked the kick I expected. In the future I'll be sure to add some extra red pepper to the dish, because otherwise it was quite QUITE good. Glad I tried it. I usually steer clear of vegetarian dishes because I love me some meat, but this was a treat. Since I'm cooking Thanksgiving dinner this year for the family (oh... joy.) I'll be sure to slip this into the feast.

Oh, and I added my coriander leaves kind of early, so they're not pretty and green like they should be. Tehe~

Yes, its running on TV pretty often around here.... I hadnt thought about it, but maybe its not as well-known in the USA themselves because some of the movies show boobs, which gets rated way harsher over there? Over here, some boobs and sexual humour are a 12+ and a lot of boobs and nipples is around a 16+ rating, over in the US its 18+, isnt it? On the other hand, violence and gore gets rated way ore harshly over here than over there, around by the same measure i think.

Personnaly i think showing kids and teens boobs is way more acceptable than showing them guts, but what do i know.

Sounds about right, yeah.

The stew is beef and veggies yeah. Typically you would serve it with something, the something depending on your region and personal taste. Rice, potatoes, and bread are probably the most common, I've done with egg noodles.

There's room for variation. I usually make a lemon-egg liaison with beef stock cube, and add lots of onion and crushed red pepper.

Potatoes or Noodles are the standard for it here. You would usually crush the potatoes with your fork before eating so they absorb the sauce better. Also, just like Curry, it gets better if you let it stand for a day.German word for it is Gulasch, by the way.

Just attempted a pumpkin cake, the amount of time prepping wasn't worth the end result (hollowing out the pumpkin was a nightmare). Next time I'm just gonna go for some pumpkin puree instead.

You guys are American/European/Canadian, right? What does beef stew taste like? I've always seen it in the recipe books, but I've never seen it served in restaurants.

Savoury, beefy and flavoured with whatever herbs beg and such. All the different textures plus some dumpling. Ohhh yess... some fluffy dumplings that soak up that sauce....

mmmmm.....

I myself like it best with noodles. Especially if they're homemade. That's a treat right there.

It really depends. Old people seem to like it alone, and just eat the stew from the pot, parents serve it to kids with something to make sure the soup gets eaten up too, bread at least, I like to use it as a base for soup.

Also, gulyás is a hungarian word, which is an outrage, considering that it means that hungaria thus had bettered the world in any way. Then again, hungarians actually make guláš without densing it up with wheat, which I've always thought was the point.

The best part is how fast it's done, and how much of it always gets done at once. One person really can't eat it all down alone fast enough. People outside of central Europe need to step their game up and learn to work with leaf dough too.

Hi everyone, how are you? May I take moment to share something with you? Today I prepare from scratch special house gyoza. Using pork, shrimp, garlic chive, cabbage, and special seasoning. I also make sauce for these with special seasonings. It is work hard to fold these all by hand but worth the effort. Please take one and do not double dip because everyone will to share these with each other.

Hmmm....

So what do people have for breakfast?

On work days I have porridge, but find I need to top up with bread and some form of protein item to last til the vague region of lunchtime.
Well. I seem to feel somewhat sick those mornings these days anyway. So looking for ideas maybe?

At home: Bacon with toast and marmalade, hot chocolate or coffee, and sometimes scallion pancakes.

At dorm: slices of bread

Can't do that here, we don't have a toaster. At best it'll be microwaved and limp.

Going by my awful metabolism I'd be hungry about 2/5th the way to lunchtime on just bread -.-

And on no breakfast I'd probably be TKO about the same time =____=

So, just boiled and crushed some kitchen chicken, mixed it with flour, worcestershire sauce, and a bag of doritos, and cooked it into chicken patties. Covered it up with bacon sandwich spread and sauce that I made by mixing unhealthy amounts of ketchup, seasoning and soy sauce and smacked it between two tasteless slice wheat loaf. I'm not a cook, but it was deliciousu.
