Depends on the quality of the eggs, but they're good when you mix them with rice since it's really like a jellyish kind of thing.

Hm. Well, if you have chicken, you can just make a normal-ish chicken stew or something.

With more western stuff, you'd only need onions/garlic/etc, some wine, and whatever other vegetables you feel like adding-- carrots, potatos, and so on. You can also add some tomato paste/sauce if you feel like it. If you have stuff like rice wine and soy sauce and sugar probably you could probably make a hong-shao sorta dish? Either way, you can serve them over rice or noodles
