I feel like many Fate fans have this weird expectation that dismantling the Grail is something interesting and adventurous
My imagination of that has always been some Clock Tower mumbo jumbo with Waver acting like he couldn't give two shit and Tohsaka being half serious half indifferent as usual.
Yeah, because insofar as Shirou is concerned, it was. Heaven's Feel is the only route where you learn more about the ritual itself and then that's rendered moot by either blasting it or Illya closing it off.

Hey I don't understand yet about this Phantom Servant thing. How can Lobo have other heroic spirit abilities and become stronger than Jeanne Alter and Saber Alter combine? Is Moriarty playing with the summoning system?

First of all Lobo is not stronger than JA and SA combined. He is physically strong, very fast and has the annoying ability of invisibility plus the survival skills of the great wolf, making it difficult to corner him even for high rank heroic spirits. Second, Moriaty has nothing to do with Phantom fusion. It was demon god Baal who did all of that. After the final battle in the time temple he escaped to 3000 years ago and plotted a revenge plan. During those 3000 years he experiemented fusion between Phantoms (those who are neither heroic spirits nor anti-heroes) and heroic spirits in the Shinjuku singularity, because the place is abandoned by the counter force, which allowed him to freely experiment the fusion. The fusion was said to be even a genius can't pull off, but 3000 years was a long enough time.

Snipe, but Andras is interesting, he didn't get to make a big plan like the others but Raum still include him and call his resolution of "not wanting to die" wrong when talking about the other demons new found purposes after the Time Temple
Did you read Salem + CCC? Already explained there.
Edit: To be more exact, Zepar shares similar ambitions with Raum, that is to find other ways to save humanity since Goetia is no more. But they had different approach and Zepar also warned Raum about his plan failing.
