Q: Are the three routes of Fate/stay night parallel worlds existing at the same time? I was curious about how it would look to Zelretch.
A: They're parallel... sort of. But if Zelretch was observing, it'd become true, and my feelings on the matter is that I'd rather two routes disappear if one was true.
If all of these became possible at the same time, the other routes would become meaningless.

Does the Grail take into account the hero's real Nasuverse history when crafting Servants, or would it still require pre-existing legends to form them? For instance, let's say someone like Alexander the Great was secretly a practicing magus. History didn't record it, and we have no legends of him performing any magical feats; even so, would he qualify for the Caster Class?
I would say their history takes precedence over historical records considering we have female King Arthur which was a complete shock to people in-universe as well as the conversation between Waver and Iskander regarding the latter's historical appearance versus how he appears as a Servant.

I mean that's not really a canon justification, the canon is you summon artoria as a woman because she was a woman.

Do we know, or have any kind of hint, how long after FSN Shirou died? Like do we know if in 2019 would he be running around doing his proto-Archer thing, or if he'd already be gone by now?
If we're talking about the Shirou that became Archer specifically, he made the contract 10 years after FSN's time period, then had at most 2 years to live after that, so 2016 at the latest.
