It's worth noting that Jinako is only a Servant because of BB shenanigans, and that she's a Moon Cancer (also because of BB shenaniganry). Even if it were actually Ganesha rather than yet another accursed Psuedoservant, my man would 100% qualify as a Rider.
"What about historical figures who don't fit into the broad archetypes of the classes" is a valid question, but I'm not sure that we've actually gotten an answer yet. There's a fair few that feel kind of shoehorned, though, and some of those classes are broad these days.
They've also not been afraid to pull out some nutty secret history/syncretism shenanigans to say that, for instance, Anastasia Romanov was secretly a mage all along and thus qualifies as a Caster. If in doubt, the Rider class is also a very broad one. Some of them don't even have particularly famous mounts these days.

The worst thing with Beowulf is how the justification for him being a Berserker is that his author misunderstood the etymology and thought that "Berzerk" came from "Beowulf" when, really, the only thing in common is that they both hint at bears. I get that they were trying to do a F/SN Assassin thing, but they kind of bungled it.

Ganesha is a bad example for Moon Cell shit, but another hero with a axe? a axe count as a sword and for that a Saber? and what a about a club, can a club count as a sword?
Can a big knife or dagger? count as a sword but with the hero in question to don't qualify for Assassin but Saber?
That is more in gripe main about. Archer are easy to classify as is the projectile class, Lancer the spear users and similar looking weapons. Rider the whole concept on mount something.
