Does it matter? Meltryllis makes more sense because of the naming scheme of the other Sakura Five, but people didn't suddenly decide to call Saber Altria because of that being the localization wanted for FGO.

So, in HF movies, why does TA need Caster to get rid of the seals that bound Kojiro? It's not like Caster summoned TA right? Zouken did, so shouldn't he have the seals?
And if Caster had control over TA, why couldn't she stop TA with a command so he wouldn't kill Kuzuki and bound him in a way that didn't end in complete slaughter of team Caster?

Zouken used Kojiro's body to summon TA but he wouldn't be the Master.
As for using a Command Spell. There's scene in the first novel for Apo where Sagara tries to use a Command Spell in front of Jack and Jack cuts his hand off before he can't finish it. I believe it'd be the same case with True Assassin.

Not to mention that, from a Doylist perspective, in the last route you just had the whole "Kirei orders Lancer to commit suicide and gets killed for it" plot point so it would be kind of redundant. And a "Caster tries to order Saber about but she resists the command spell" plot point. Having her give orders to True Assassin also makes him seem less threatening and adds a bunch of complications to the plot that honestly don't need to be there.
