I don't know Lu Bu's and Guan Yu's deaths were pretty dramatic, too, and I would hardly consider those "fair fights".
Rules of storytelling arent universal especially when you work with a historical basis but basically seeing your not-quite-protagonist getting mob owned doesn't usually make for a great one.

That's what seemed to happen at least considering as soon as Shirou killed Shinji we just see him killing the Ainsworth minions without any time seeming to have elapsed and he was wearing the same outfit the whole time (which he only stops doing once he kills the Saber card user and it doesn't seem like he puts it on again when he re-installs Archer).
