It's probably safe to assume that the FGO events are canon. Not doing so is just going to get you confused when they later get referenced in more serious scenes, like the Time Temple (MHX shows up) or Salem (the event Demon Pillars get mentioned) or IIRC Holmes' interlude (CCC event is obliquely referenced).
This goes double for events that are actually connected to the greater story of the game, like Prison Tower or the CCC collab.

Could a hero whose true name was forgotten like the Viking of Stamford Bridge become a Heroic Spirit, or would they have to be a wraith or Counter Guardian? Just curious.

In order to become a heroic spirit there should be enough faith supporting his/her existence. Historical existence is second in importance to faith, (i.e Jack the Ripper) However in this case the said lore is limited to a region and is not popular on a global or even a continental level so most likely he will be summoned as a counter guardian/ Wraith. But then again Type-Moon Canon is very flexible. If he is in a fact a loli with boobies then he is qualified as a heroic spirit.

He's basically the "face" of Norse berserkers in the English-speaking world. He might be a Kojiro-level Servant, but my guess is that he would qualify as a Heroic Spirit.
About the Moon Cell, I'm reading the CCC event story and Melt makes it seem like there isn't one in the Grand Order timeline.

Are Counter Guardians as Strong as Heroic Spirits or no? I'm watching UBW anime (2014). Lancer easily kicked Archer around. Or is it simply EMIYA is weaker than Cu Chuulain?
Counter Guardians are just a job title for certain Heroic Spirits.

As for why he lost, Archer is pretty low-tier as a Heroic Spirit. He really only got in through the back door, so he's not up to snuff when stacked next to a true blue legend like Cu.
