Grail: It's Mongolian Golden Bowl (search Mongolian silver Bowl then imagine it as gold), Khuhchu shaman made it to help Genghis Khan became king of Mongolia. Later due to some argument Khan killed shaman, in death shaman cursed the bowl. Khan suspecting it is cursed so sealed it in current location, over khan's conquest many people killed by his force and their anguish and curse filled the bowl.
Plot: Miners blew seal and it's mystic might felt across almost all Mongolia, not curse but holy aura. Mongolian shaman organization feared what may happen to Mongolia in war for Bowl so made ritual so it connected Grail System to minimize damage.
Overseer: Kotomine Kirei (There is church in Erdenet called "Church of Jesus Christ of Latter-day Saints" no idea what it does mean, never entered there and across road there is 150m X 150m blank land).
Master of Archer: Rin Tohsaka (Grail destroyed in fourth war for good, no Gilgamesh otherwise it's same).
Master of Assassin: Chinese old family, young magus (fiancé of loli).
Master of Avenger: Crazy Iran magus, one step to dead apostle.
Master of Berserker: Chinese, noble family loli.
Master of Lancer: Indian middle aged, crafty, 3rd gen.
Master of Rider: Young magus from old family who has connection.
Master of Saber: Some old stereotypical Russian magus.
Archer: Oda Nobunaga.

Seems kind of boring to have an all-original Grail War populated only with Servants we've seen in canon. Not even Genghis Khan or someone related to him?

Well i really no idea how to make servant. Summoning Genghis Khan (We call him Chingis Khaan in Mongolia FYI) would probably pretty hard since artifact connected to him is almost none, even picture you see today was drawn after Khan died by his Grandson because when he was alive he forbidden making picture and statue of him.
I don't think it'd be that hard to make up a fitting catalyst for Genghis/Chingis (the hunting bow he killed his brother with as a kid is an obvious one that springs to mind).
Heck, Gilgamesh's catalyst was the first snake-skin in the world. That's not exactly the kind of thing you can find in a museum.
Let's just say that Genghis hid all his belonging for convenience if not it will probably turn into Holy Genghis artifact war.
Fun fact about Chingis Khaan's clan founder: He was youngest of 3 illegitimate children, when legitimate children asks their mother how she had 3 children even after their father died and no man around except slave (he was probably real father) she said during night time some kind of light entered through roof and touched her stomach then she had children so these children are children of sky.
