I'm afraid that Sir Shirou only has his eyes on Her Majesty. This is her Sir Shirou after all. The other relationships you speak of exist outside of Avalon, in other timelines. Of course, Sir Shirou is well acquainted with the Ladies Rin, Sakura, Medusa, Taiga, Illyasviel and a few more, but his heart belongs only for Her Majesty.
Also, Mr. Bear, you may go along breeding every spring with another mate, but us humans tend to be more into monogamy. And we are not a harem. We are under one King, but we are all equal.
