Honestly Berserker EMIYA isn't even that weird. I could easily imagine a version of EMIYA who sacrificed even more of his humanity for the sake of his ideal, becoming a single-minded machine that only exists to save people. His version of UBW would manifest the swords directly from his own body, sort of like Shirou in the HF route. I agree that Ace Royal has lots of silly alt Classes (Caster Alex, anyone?) but I don't really consider that one of them.

How his arm changes his height I can't fathom, but that's what it says.

Well Arm Span is ≈ to Height, so it's only logical that increased Wingspan would make you taller.
Plus you know the whole being able to dunk from [I forget how long his arm is] without even having to jump
