Interesting concept, and truth be told I'm surprised no one has done anything like that yet... a crossover with the Fate series (or specifically the Type-Moon series) and Touhou. I always thought it would make an interesting combo, and here's one and it's well-written and interesting too! Though I hope to see Tamamo-No-Mae (Caster) appear in this tale as well, she would definitely bring a LOT fun to Gensokyo!
However, might I suggest you hosting your story other than google docs? Though I understand the choice to add music, but people need a google account or log in to view your story which isn't convenient a bit (well, I'm not sure about others but I did so for me). You could post the chapters here, in spoiler tags I guess. Just giving some suggestions.
I'm looking forward to the next chapter soon.

I can deal with spelling, grammar, and style. I'm a bit iffy on characterization, but I should be able to deal with things that are blatantly OOC for no good reason. And as for canon... It's Touhou. Everything is canon.

Umm, if you don't mind, I'd also like to take a shot at it.
While I'm not all that confident in my skills, I do know I'm positively anal when it comes to the things a beta does when I'm in that mindset. As for what kind of beta'ing, I tend to trust that the author has plans for their writings, so I focus primarily on the structure of the story and how it flows, along with grammar and the such. I do best when I work with someone else and we cross-reference our finds, or as the secondary beta when the primary is done and I scan for anything that the other might have missed. Characterization...unless it is blatant, I would let any inconsistencies slide, but I would make notes on them, if you want, I can include them in my beta report as well.
