I'm sure a ton of fanfics and fanart has been made with that premise*, given people for some reason love shipping Rin and Gil together (maybe it's just their contrasting color schemes). Then again, that's often with Proto!Gil, who's substantially less of an asshole than his SN counterpart, and so more likely to comically try to woo Rin than shank her on the spot the moment she does something he doesn't like.

*For example, this (Proto Gil) and this (regular Gil, albeit slightly OOC).
