Don't all Masters get stat screens of Servants? Like how Waver tries to look at Lance in Zero but gets blocked by For Someone's Glory, or something. And he's definitely not Lance's Master.

it seems he has oberved her enough to know her tehcnique. Also, since his servant and shirou were the last two standing and that in ever war, the saber class has gotten to the final battle for the grail, it seems like a fair assumption

Who said anything about techniques? It says right there that he's trying to see if he recognizes the sword or general ability from somewhere. Like "Oh look! That giant majestic spear with a pink eye and gold on it! I recognize that from the descriptions of Karna in the Mahabharata!"

Or, and I'm just going out on a limb here, Darnic feels that he should be able to recognize Mordred's abilities (because, as that very paragraph notes, he has the master's sight) but can't because of the helmet.
Thus the feeling that he registers the abilities but can't access the info.
