What he took out of that though was a much more positive image he then proceeded to fuck into Saber, that it was what she chose and that she couldn't have done any better.

Archer makes it clear to Shirou that it's pointless and that he will fuck up.

If anything seeing dreams of Saber acted more as an encouragement rather than a challenge.

Shirou would use different means to murder people. Also there is nothing quite like seeing Ilya getting betrayed and killed by the only person she still loves. Delicious.

I think that one is a challenge to the future (UBW), while the other a challenge from the past (Fate).
But I think that, since Shirou's way of life is enormously dictated by his past, the latter should carry a slightly higher weight. Not much, mind you, but enough to make him perfectly resolute, while post-UBW Shirou is all about finding a decent balance. Something like 50% heroism, 50% sexytime with Rin, and possibly Saber too.

I don't get this challenge from the past thing, every route is about his mindset as it shapes his future outlook on life. Any route addresses his past as the source of that.

Fate is more of a setup to the conclusion that is UBW, or as Nasu himself said it Fate asks the question and UBW provides the answer.
