I don't understand how some 200k peasent rebels would even make the amount of guns and munitions they presumably would need (nevermind that I would expect most gunsmiths would be more open to the idea of working for the government cause monies) nevermind in 1550 or whatever.
srsly, this was a time period where Columbus said having cities of gold + all the mines involved would only get you an army of 50k mercenaries and you can expect to be the strongest dog in the world because you are so much better armed than anyone else as well as the largest army in the world.

Even in the 1700s large peasant armies were significant threats to the European state: Pugachev was a quite serious problem for Catherine. Guns aren't still quite everything.

Since nobody bothered to ask what time we be playing.
I'm open on weekends or Tuesday and Thursday generally whenever, and Monday and Friday after 5PM EST (20:00 GMT) or so.

It will be happening Post (or perhaps even on)-October 30th. You don't actually need any DLCs unlike Civ to play multiplayer. Me, Petri, Magos, and Five all played from 1-5PM~ish EST every weekend or occasionally the weekdays last time. Don't know if it will be like that again (we had to stop at 5 as Five had to go to sleep because he is weird and likes sleeping at 10). I personally play with Petri every once in awhile where we occasionally go up to 1 or 2 in the morning (aka like 8 or 9 AM for him hue). But obviously we don't expect to play that long with a big group.
Uhh, as far as how similar the games are, you definitely need to get used to it. Though, my opinion comes from learning EU3 and CK2 as my first grand strategies rather than EU4.

If your only experience is Civ you might be in trouble but we can just give you France and you can pretty much figure it out as you go with the blue blob.
