I'm wondering if anyone could help with an issue I'm currently having making Karaage. I make my coating from soy sauce, sugar, sake, garlic and ginger and then cover the pieces with potato starch before frying in oil as per the recipe. However I've noticed the pieces don't seem to fry very evenly, and some of the potato starch appears to still be plain white as if it weren't cooked at all. Does anyone know what causes this? I thought it just meant the pieces weren't in long enough, but they burn if I leave them in too long.

If it looks like this that's normal
if you mean like stark white then I think you just have too much starch on it. Shake off more liquid from your marinated chicken before rolling it in the starch. It shouldn't be super dredged in it.
Also make sure you're flipping your karaage pieces around

interesting, i've never shaken the liquid off
the first two times I made it I was worried that it wouldn't work because the way the recipe had me coat it didn't leave things totally coated so i was worried they wouldn't have the crispy covering
i soon learned that wasn't true
and now I might even have too much starch
i'll try that next time
edit: i thought my rice cooker's slow cooker function would work to make a casserole
the broth won't thicken up at all
it's half past midnight and i have no dinner
can only set it to go overnight and hope it thickens up

Inspired by Five's Europe escapade, I made a Dobos torte as a birthday/New Year's celebration cake. It was good, but looked rather similar to a cow pie due to not being expertly frosted (by me). Pics to follow when I get Imgur to work.

Adult's Sweetness
Tangerine tasted, well, like tangerines. Nice, semi-sour, citrus-y taste. Not as sweet as a proper tangerine, but just as flavorful.
Cranberries and Almonds was my personal favorite. A nice balance between the the flavors, the dried cranberry bits cut through properly and the almonds added a nice texture
Double berry+ was kinda meh. Too many random flavors made it taste pretty meh
Adult's Sweetness tasted like a regular dark-chocolate kitkat except someone put in some rum or whiskey

I completely forgot to respond to this (I'm sorryyyy) but yeah they're super hard to make! Someone I know tried to make one and... it kinda ended up like a giant sponge cake instead of a torte, it was awkward. I doubt sachertorte would be any easier to make, though, they're tricky things.

I've found that the cake as a whole is absolutely delicious, but the frosting was a tad too sweet and wasn't as rich as described in the recipe I was following (a mixup led to me omitting the eggs).Spoiler:
