Other things can as well. However, Jewels have the advantage of granting the infused mana certain elements and making them instant grenades.

The whole Gem Sorcery deal is essentially "hoarding mana for later use", a reflection of the Tohsaka attribute.
It's Rin who is a powerful magus who can capitalize on a huge mana pool, not Gem Sorcery is awesome or powerful.

It depends on how you use the gem.
If you use the normal one-step (一工程) Gem Sorcery spell, it is unleashed as a magic grenade.
If you use the gems as mana-pool, then the element does not matter.
The "Conclusion Sword" thing is probably Rin's own spell augmented by the Gem mana, because it is apparently longer than one-step.
