The Grail itself has no will, it won't interfere in the war.
Seriously speaking, if you got a Rider and went off to travel the world together, the other Masters would eventually hunt you down since the Grail needs all of the Servants to activate the final ritual.
But other than that, it's a nice thought.

That's not actually true, it only needs five or so servants, but why get the trouble to summon a servant if you don't plan to fight? Even Shirou gets one servant solely because the summoning circle was already conveniently placed in the shed, and he had a catalyst with himself.
Outside a Grail War, definitely a Caster. Two of three examples we've seen have been pretty awesome (waifu fox and elf ear waifu against tentacle-summoning frog-faced-definitely-not-waifu), precedent is on your side there, and even if all goes wrong, you still get a magic-using Servant who could either teach you magic or rig up some system that lets you use magic without circuits. Then it's a one way trip to the head office of some arsehole pharmaceutical company, a meeting with the board of directors, a little magical hypnosis, and two plane tickets to my own newly built island.
Inside a Grail War? I wouldn't be there, and wouldn't get Command Seals in the first place.

Didn't the Einzbern always summon their Servant in Germany? And if I remember correctly, two of them have been pretty OP.
The assasin master of black faction summoned Jack in Japan, though the Grail was in Romania.
Strange Fake rider master summoned it in her dreams. And Ayaka in Japan, though the war is in the US.
Also even if this hasn't any kind of importance now, just because what counts is participating, I'd take Rider. Because every rider (minus one perhaps) are awesome.
Hmm, I can only imagine what possible Servant I'd want to summon. Though, if I was going with canon ones only I'd probably want Rider, just because the odds of summoning someone I like are probably decently good, while Caster? Almost assuredly doomed if I had to go with canon ones, or at least unhappy.
Assuming I don't get to pick said Servant, Caster probably has the best odds of being someone I would at least be consistently interested in. And it's probably what I'd aim for assuming I had any say in a catalyst. Without one? No clue who I'd get. But I think with a Caster there would be decent odds of success, so long as you aren't trying to win a direct fight.
Saber because
1) Gun-swords are BA
2) They supposedly are the best in stats
3) They have great NPs
4) They are loyal in one way or the other
5) All Sabers are hawt
6) They are all adorable in one way or other. If not, they act cool.
7) Clothes, clothes, mahou-shoujo-shonen-transformation-all-types-of-outfits.

If not, then an Archer because
1) All types of arrows/bullets/even magic fireballs
2) Idependent Actions means I can give them some money, and they could go buy some cute clothes
3) Their NPs are always surprising.
4) Backstab, backstab, I'll whip them into shape
5) Their clothes tho
6) Laid back, normally, a nice change.
7) Their clothes tho.
