Sure, if your servant is right next to you. But look at FSN when half the masters go to school without their servant.

For example in Fate/Zero in this scene Assassin could have taken out Kiritsugu effortlessly and Saber would have been left with no master and vanished.

in the game i will either have to make the servants myself or make a customizable servant, a cumtomizable would take to much time so at the start i will need to use a "dummy" servant to hold their places this is why i asked the class so i wont need to make 7 dummies, it will change later but everyone has to start from the botom

yes i will change it later but in the beginning of my project i would like to have just one default servant for test purposes so i wont need to redo 7 servants later

it depends, i could make a ruler or a avenger and have the story fit but i don't know the heck about these classes so its kind of difficult

That's why you can disregard them for whatever you're currently doing.
You can include them after you learn a bit about them.
