I remember when i was a kid, my grandma had this frame that her father brought from turkey, of saint george, in a roman like armor and a red cape, riding a white horse, wielding a very long lance and trampling over a dragon ON THE MOON!!! It was realy freaking cool

I know that. There's no way Mordred is stronger than Lancelot and Gawain, or that Okita is on the same level as King Arthur. That's said, there is some of that way of thinking when they give Servant's stars and their overall importance. Like how they regret putting Roma as a 3* because he is supposed to be higher than that.
Also for Arash, he himself considers him to be a low-ranking Hero despite his accomplishments so that has probably something to do with it.

Well the thing is that yes George is famed for wielding a dragon-slaying lance... Except its called Ascalon. Whether Ascalon was a sword or a lance depended on the legend, and from the looks of it they do seem to include some aspects of Ascalon being a lance in his NPs as well. Specifically his Dragon Slaying NP of when fired at range resembles that of a javelin of light.
