It's more like 'You can't really be her because that's absolutely not something Artoria would say after I cut her down and destroyed her kingdom, especially not directly calling me her son.' Like the implication being that that's what Mordred always wanted to hear but she knows it's something Artoria would never say.
The Bad End where she literally turns Shirou into a sort-of-alive-but-not-really magic wand sort of disagrees with you. Medea may be the Team Rocket of FSN, but she is still very much capable of truly horrific shit. Case in point, her FGO mats profile confirms she killed her kids. That is very much not the actions of a "weenie" who would balk at killing innocents in droves.
This. 90% of the fan work I see Nobukatsu in involves him being a butt-monkey (sometimes almost literally in the more explicit stuff). I don't think being everyone's favorite b*tch is quite the same thing as being a husbando...

One, she has the advantage of being a cute girl.
Two, FGO Liz is basically post-CCC Liz, so she already had her redemption arc.
Three, Liz often brings humor into the situation whenever she appears, something Shinji rarely does.
Four, she also got more development in Extella.
I mean, if FSN Shinji was more like Extra/CCC Shinji, I could see your point, but beyond both starting out as arrogant twats, I'm not really seeing the parallels between these two characters.
I mean, Shinji in FSN is basically this obnoxious mid-boss whose meant to be unlikeable.
Meanwhile, Liz is the Team Rocket of CCC, and eventually comes to admit she's a horrible b*tch who doesn't deserve redemption, but damn if she isn't going to try and earn it anyway.
