You probably haven't heard a thing about what he did in Prototype Fragments then...
Paracelsus was one of the biggest douchebags in Fragments, and the fact that he's chaotic good surprised me. Then again, if we go with servants having past knowledge of the wars they participated in, then Paracelsus was just obssessed with Manaka (because he's a magus obsessed with the Root), and his desire for atonement is because he realized the wrongdoings he did under Manaka up to his death in Fragments.
tl;dr: Paracelsus was a decent guy until Manaka (da ROOT) happened.

On a side note, I wanted to check the wikia for something, but is wikia.com in general down? I can't access the Seraph of the End wikia, either.

Fragments: Paracelsus kills his Master FOR DA ROOT and hits Misaya with creepy walking zombie death curse for no apparent reason other than he felt like it. Also he reanimates one of Assassin's victims to be her sex toy so she can feel love or something. Even she thinks its creepy.
Also he tries to drown Brynhildr, but they're fighting there so that probably doesn't count.
