The reason why Cu Alter interlude is like this is that Higashide couldn't write a good Servant fight even if his life depended on it. He's like a guy who mashes buttons/spams one move in fighting games, only the HP bar is limitless so he can't lose. Because of that to make the resulting slog even remotely cool he has to rely on throwing big names and contrivances.

The real reason for unsatisfying fights in F/GO is usually just because the actual fight takes place in gameplay and so the narrative bit is just "here's the opening blow" and "here's the finishing blow and final monologue", occasionally with some extra bits in-between if the fight takes multiple arrows.
There's plenty of bits where the story flows really awkwardly if read in My Room but is decent enough when actually played through.
Fights that have more to them than that are usually ones that are outside gameplay, e.g. King Hassan vs. Gawain, although you do get the occasional awesome one where the gameplay is bookended by cool scenes. Usually big climactic ones in Singularities etc., though, rather than just interludes.

I think Yan Qing and Danzo's interlude are pretty well written. The former closes the issue with Doppleganger while the latter cures Danzo' Alzheimer.
I've read pretty much all parts of Apocrypha that is availible in English and most of F/GO ones, so let's say I am not unfamiliar with that cook.
Also, why won't you provide any counter points? If the side story of Ow the Edge is that good, I would admit that it was unfair judgement.

I dunno. I read it, think it is just a recycle of his first interlude and just thinks meh. This is especially because I've finished Yan Qing and Danzo's just before him. Heck, even Monk guy's proving himself better than his corrupted copy and Caesar revealing that he is determined to remain plum since slimming will cause Cleo to stop existing is more interesting.
