Otherwise Tsukihime overall.
Special mention goes to Mahoyo because best TM dude is in there.
Mahoutsukai no Yoru is my favourite because I haven't read it, therefore it holds unlimited potential.
Melty Blood is a series of fighting games, so no, they wouldn't count in regards to visual novels.

How so exactly?
It's kind of become a thing to say that any game with a lot of text has "visual novel elements" or is a straight up VN.
Anyway I picked Mahoyo because it's pretty and I like the characterization/multiple PoVs thing.
