I hadn't thought of Cu as Grand Berserker until now. Given how coy Nasu has been with what he'd be like as a Berserker, you might be on to something...

Didn't Archer Gilgamesh say that he doesn't qualify as a Grand in the Final Singularity? Also, my money into either Karna or Herc for Grand Archer and Longinus for Grand Lancer (most famous spear in the world, after all, etc). Grand Saber will almost surely be Artoria (I think Grand Saber voiced by Kawasumi is even datamined). No idea for Berserker, powerful figures that come into mind are Lycaon, Genghis Khan or Lupa. Grand Rider Noah makes all the sense.

I remember slightly hoping Arash would've been Hou Yi back when all he had was a design and a fitting description.

Currently (like, actually) finishing Apocrypha 3
when solomon was summoned by marisbilly he was still called "grand caster"
so yeah
If archer herc was really a grand, you'd think narita would have made a bigger deal about it.

quetz's dragon riding is incorporated into her Riding though.
We've still never seen the dragon riding skill that zork is talking about.
