If you want a serious answer, I'm pretty sure most Servants are casually supersonic at least. More if (like Cu and Diarmuid) they're supposed to be really fast.
If you want an exact number, well I don't think you're going to find that in any Nasuverse work. I suppose you could try to approximate it from the effect their movements have on the surroundings (cratering the ground, sending shockwaves of wind, etc) but given how much the franchise runs on stylized anime logic, I wouldn't exactly bet on that either.
