I hardly think Fate/Zero is "Feminist", as in how Saber is handled, considering the fact that Gilgamesh is really sexist, and I did see a review of the original F/SN that said they enjoyed 2006 more because Saber was not a "doormat" like she was in Zero.

But you see in Zero Anime SEIBA is a Strong Independant Woman™ but in Fate Unlimited Blade Works Anime she's "Generic Tsundere Waifubait".

(Nevermind the fact that Zero was all about the Universe shitting on her and showing her that her views were wrong)

Anyone complaining about UBW 2014 because of that has completely missed the point, it's not her Route, her route was adapted, and since most fans are told to skip the anime, which I don't mind if you're gonna sit down and read the VN, but if you're gonna do anime only, you have to watch Fate/Stay Night 2006 along with UBW 2014 and Heaven's Feel Trilogy 2017.

TBH what bothers me most about those comments was mistaking Saber for a Tsundere.

Like, that's completely the wrong dere people, c'mon.

You don't need to watch for the former and the rendering of the latter is literally less impressive than the vanilla visual novel, nevermind RN.

DEEN's OST and boht opening and ending songs are cool though...
    That much is true....
And I was a bit disappointed that Tainaka Sachi no longer sang for FSN anime adaptation

I don't know. While Fate/extra CCC does not necessarily make that unnecessary, it certainly makes it redundant.

What are the reasonings behind those thinkpieces? Women in Zero are either just used to be cheated upon/try to cheat on people who love them, are doormats in other cases, job a lot, get mocked for their beliefs, and finally turn into a literal wish-granting device.

The reason would be that F/Z supposedly shows multiple ways how women become victims in a patriarchal society.
And considering Aoi, Iri, Sakura and Sola-Ui, that's not a hard argument to make.

Leo has also made a well-constructed argument that "Zero" also deconstructs typical notions of masculinity. I disagreed with him - I think "Zero" actually reaffirms those notions -, but it was a good argument. I don't remember in which thread it was, though - sorry!

Edit: That said, I have only watched the anime, and comments by some other users have made me realise that there are more profound differences between the novels and the anime than I first thought.
