The only recorded instances in which a King had died were ones in which the Knight that killed them consumed their Crest, becoming the next King.

Kings can regenerate by taking over their Knights, and can't be killed conventionally; destroying their body won't work. The only way to really kill a King is to destroy or consume the core.
The main theories on what happens when a King dies without a successor is A) the Knights are released from its control, but the Strain remains intact; B) the Strain itself disappears, even among all its Knights; or C) their Knights all die alongside the King. No instances of this event have been observed.
