Safe to say that if somebody has a weapon and actually knows how to use it, he's toast.

Deciding factor is whether or not he sees the combined forces of the round table as a threat.
Serious Gil pulls shields to block their beamswords, then drops an Ea on them.
Additional steps could include GoB spam to wreck anybody who isn't Gawain with his ridiculous defence buff, a SunBlocker 5000 to block out the sun, making said defence buff a non-issue, Vimana making them all impotent to do anything but beamsword.

That sounds about right, but is there precedent for Gilgamesh using that much strategy instead of just defaulting to GoB spam? Even when Gil uses his enemy's weakness against them, he's usually dealing with just one at a time instead of multiple at once, nevermind with that level of power.
Besides I'm pretty sure Gawain's defence can cover all his allies too. Like, it's important to remember that with that many enemies, it's a high possibility that he can get outmaneuvered.
He could probably pull out Ea right at the start, but even when he does do that, what are the chances he'll use enough power on it to one-shot all of them?
What I'm trying to say is, even if Gilgamesh recognizes them as a 'threat', would that be enough to get him to do more than just spamming more than usual?
Gil can theoretically just nuke all of them with Ea (or most of them assuming Saber has Avalon) , but with that many opponents and his ego I'd probably lean more towards "it's jobbing time".
On the contrary, he takes Heroic Spirits seriously, so he'd go all out.
The only way a bunch of HSs could beat him, barring him being restricted in some fashion, would be Waver, Lancelot, and Team Chaldea walking up to him while he's drunk, loudly declaring that they're there to beat the shit of out him, and then doing so.

In SF True Archer basically had the most impressive showing against GoB compared to most other Servants we've seen so far and Gil still didn't want to use Ea on him.
If he went to Ahnenerbe when Maid Alter was there, no need for a team.
Especially true of Caster Gil.
