To be fair to Apoc, Iskander's army did show us that there are a LOT more Heroic Spirit types that can be summoned than we thought- the guy had a couple thousand in his age alone, in his army alone, so it isn't impossible that they wouldn't have heard of a lot of heroes. Guessing wrong might just get your hero killed when he goes for a weak spot that's on an entirely different invincible hero that was less famous than the invincible hero you thought he was.
But then, I doubt that was what was going through the author's mind when he wrote it.

Atlanta and Chiron have lion/horse tails which combined with both of them been archers narrows the list down a lot.

I think about as many Apo Servants can be guessed pretty much at a glance or within a single conversation as can't. Atalanta's lion ears and tail are pretty distinctive, for example, and Shakespeare never shuts up. For a lot of the ones you couldn't it wouldn't matter anyway, such as Astolfo or Fran.

I personally imagined you could deduce something from Fran given the distinctive head bolts and the wedding dress going off looks alone.
