Joseph DID say that early in BT. Besides, Saber doesn't have enough sass to interest him. Both women he fucked have a healthy amount of it.
As for that second point, yeah, Saber and Erina are somewhat foils to each other. However, both did suffer quite a bit throughout their adult lives, though Saber's was considerably shorter.
Honestly, probably not, or at least not for all of them. Most interactions with Tokiomi, humourous that they might be with Sakura are pretty neutral, Rin is the daddy's girl and we don't know how Luvia feels about her otou-sama.
Sakura's like for Shirou for perseverance in the face of a lack of talent was primarily because he continued despite not getting positive results. Seems a small addition, but it's a big difference if you think about it.
