Keita-kun, Haga Keita-kun, a guy who's known the famous couple since school.
May not like all his music, but he's done many great BGMs from Tsukihime to now. He's even written pretty good songs.
Toss in Nagata and Fukusawa for their work on soundtracks.
Of course something rather special happened when Kajiura read Kara no Kyoukai and rounded up her girls. Her most inspired music and songs I think.
For Emiya, the original somehow remains the best for me. Oddly it's the Battle Moon Wars version that takes second.
Despite the limited synth, the strong drums and arrangement feels suited to the Shirou and Gilgamesh scene.
The image of the King of Heroes trying to comprehensively murder some kid with his collection of mythical weapons and that kid steadily fighting it all off and getting in his face.

Also, I'd say almost all of Kajiura's soundtrack for Zero was really good, and the same is definitely the case for Presage Flower. She is definitely the right composer for adaptations of Zero and HF.

There are two Unmei no Yoru's tho, the TV show version and the UBW movie version. And they're completely different songs.
