The grail mud didn't corrupt Gilgamesh. At least not directly. By incarnating him, it made his personality oriented with the modern era which made him more extreme then he normally is. So the Grail didn't corrupt him, the modern era did.

The entire point of that scene is to show that Gil is too Gil for any corruption to take place, and it just spits him out incarnated instead, so...

Not much. Gil is a pretty special case with his connection to humanity.
