It just seems like to be a rather self-centred thing for the relatives to do. They can't even say "It's what s/he would have wanted", because it demonstrably isn't.

"They've suffered enough". They're dead, dumbass. Cutting bits out of them isn't going to make them suffer more. If the relatives said "We've suffered enough", I would at least appreciate the honesty, but my response would still be something like "Well they wanted to go through with it, and I'm pretty sure their wishes overrule yours".

Well, it's like those dickwads in fictitious works who are anti-necromancy. Ignore them. Getting back on topic, hire an attorney who is more likely to carry out your will than your own family, and give him or her the legal authority. Of course, this is coming from the same person who has no problems with people displaying legally obtained human remains in their home.

Because one of the main reasons that makes people shy away from organ donorship is the fear that there would be an incentive to harvest their organs while they aren't actually braindead yet. And now consider why cutting relatives out of the process or simply overruling them would not help alleviate that fear.
And the cases which the relatives directly contradict the dead person's will are too rare to risk a general drop in organ donorship.
