Basically, think of it like in Zelda.
Most people barely remember anything about the last Link except that he was "the hero who saved the world from evil"
Heck, I don't think any of them remember the names and stuff of the last hero.

This is somebody who literally saved all of humanity though.
If aliens invaded tomorrow and somebody flew into space and punched them into the sun, do you honestly think in ten years or so people would just shrug their shoulders and say "who?".

That's a medieval fantasy world though. The end of Gurren Lagann had a modern technological society; there's no reason their record-keeping abilities shouldn't be equal to our own.
Absolutely.
Like, people didn't even know why the beastmen were after them or why they lived underground and shit.
Huge transformations in civilizations can happen in fairly short amounts of time. Records and heroes can be lost and forgotton.
People are hugely more invested in their present situations than in what was done in the past.
Heck, I'd argue that's what the whole final scene was about. Simon basically saying "ya the next generation is going off to solve the problems of the new society, old warriors like me should just fade away into obscurity"

Well, I personally find it unbelievable.
I understand the thematic point of the final scene perfectly well, but the record-keeping of any society that could relegate the savior of mankind to a footnote is frankly appalling... (Not to mention, how are we supposed to feel confident humans won't make the same mistakes of overusing Spiral Power when they apparently can't keep even the most basic facts of their history straight? Those who don't learn from history are doomed to repeat it, after all).

I mean, we're not supposed to feel confident.
That's why Gimmy or whatever his name was was heading off into space at the end to try and convince other spiral races to not do it as well. Eventually some other dumbass is probably also gonna think "wtf why aren't we using this infinite energy we have?"
Heck, in our current era of misinformation, I'm surprised that you're so reluctant to believe people can downplay the significance of or outright deny events that are objectively recorded.

O walls, you have held up so much tedious graffiti that I am amazed you have not already collapsed in ruin.
Yeah, that's basically what it was. Simon was probably super famous, but that boy wasn't expecting the random old dude he met to be THE saviour of humanity.

Also, without turning this into a GL thread, I'm simply going to say that I believe you have quite the odd view on the series, Megas.
What if Rin summoned Glenn Radars (Akashic Records Of Bastard Magical Instructor) as an Assassin-Class Servant?
Fate would only have one route
here is a list of my servant sheets(new and improved format for my servant sheets)
Come explore the White Library, and reach the bottom of this Abyss
Fate / White Memoria
What if Shirou summoned Arthur?
The Act of dozing off in the afternoon is a luxury indeed.
Coffee would be nice, though.

What if Kayneth summoned Gilgamesh?
Could Kayneth get over himself fast enough so Gil doesn't pincushion him?
What if shirou summoned Ryuko matoi from kill la kill?

Pretty sure I've proposed this a few times before. Ryuko as a Servant would probably be a lot like Mordred, only without the complex over her gender, so she wouldn't take Shirou's head off when he inevitably insists on calling her a girl. Ryuko would still probably be a little pissed off about his chivalry, though I imagine she'd soften up after learning about his past (presumably she'd sympathize with having lost everyone you cared about in a fire).
As a Servant, she'd probably do about as well as Arturia. Ryuko doesn't have anything as haxed as Avalon, so she'd have trouble beating Gil, but she does have regen and a far higher level of base firepower than most Servants.
Also, Rin would start blushing like crazy after seeing Ryuko's transformed "outfit" for the first time.
