UBW. It was the only route that was exciting from start to finish. Fate was pretty bland and HF didn't get good until near the end.

I need to reread HF cause personally, I don't remember any really good 'fights' outside of Kotomine vs True Assassin. I remember a few dramatic moments towards the end, but none of those would count as a whole fight in themselves.
Well, that and I found Sakura pretty boring and terrible in general
