Actually that etymology of prove originally meaning "test" has been contested. The most commonly accepted explanation for the phrase (dating back to Cicero) is that an exception applying to a specific case proves the existence of a general rule for it to be an exception to. For instance, a sign saying that you can't park on Sundays (the "exception") predisposes that parking is allowed on the other six days of the week (the "rule").
