I only started using offensive spells in ng+ when I had gems to spare and only the spells that Servants give you.

Well, in general I liked the story but I agree that I would have preferred that the Rogue Servants did not exist, I feel that a lot of time is wasted forcing them to make cameos in the main story...

Based on this I would say that it is not that Iori has acquired those desires from Musashi but that it is something that he was born with.
I would say in an unironic way that Tamamo Aria also understood Iori and that is why she was fascinated by him.

It's probably because I had low expectations for her too but I ended up liking her quite a bit, especially since she ends up being one of the few genuinely good people in the game.
By that point I already had so many healing items that I never had a problem keeping my HP at maximum.
To me it still seems much more cool than annoying, my only complaint is that when you get it you no longer have reasons to use any other stance
