Not debating about whether he traced Excalibur or not, but that doesn't make any sense. A projection is "empty inside", right? So it would not have any of the power of Excalibur nor its attributes. It would have been impossible to destroy the Greater Grail with that. Might as well go with something else.
Normal projections are like that. Shirou's are different.

It has a bit of his ribs in them. I believe his od is required for them to work.
