I think I will go with "Shirou, because he had Avalon inside and had the potential to be a powerful magus, was already destined to summon Arturia, so that's why he has the dreams" and let the whole "Saber is his destined love" outside, just to evade the whole shitstorm. Also, it makes more sense, seeing how at least 5 versions of Shirou Emiya didn't end with Arturia, while only one ended with her (yep, I'm counting both endings of UBW and HF, and Archer).

Also, I think I found the source of this "Orange" stuff.

It was in that part where Alba dissed Touko in front of Mikiya. Alba called Touko "橙色の魔術師" (Orange Magus), and I think this has more to do with the colour of her attire. For example, earlier in the story Mikiya mentioned that Touko seemed to have a rule to always wear one orange item. (In that particular case, she was wearing black pants and white shirt for a funeral, but she wore one orange ear ring just to make the point). The "Orange" does not have anything to do with the Association.

As for the "Red" thing, Alba mentioned Touko wanted "Blue" because "蒼" in "蒼崎" means "Blue", so having Blue would match her name. She was pissed off because she was given what Alba called "Broken Red", which is not even the Prime Red.

So that's that.

Okay, so Orange was definitely a misunderstanding, and yes, even going from old design to new design, she still always wears something Orange. Which shade of nonpure red is unconfirmed, but that's most likely the title she received, and I am inclined to agree with Saradin that she wears Orange probably because of her name. KnK!Touko seems to have come a long way from Academy!Touko, who also came quite some ways from Mahono!Touko, and going by what she told Araya in KnK5, these colors at that point are likely mostly semantics to her anyway. Alba was just asking for it. Thanks for clearing it up.

How much info did Zouken have about the Masters and Servants of the 5th War at the start of it?

He was most likely aware of Kotomine and Gilgamesh. Kept an eye on Shirou but I don't know if he was expecting anything. Obviously, the Tohsaka and Einzbern would participate. Medea's Master was some nameless mage and Sasaki and Kuzuki were her own thing so who knows. Probably didn't know about Bazett and Kotomine's treachery.

Servant-wise, he would only have concrete knowledge of Gilgamesh and Hassan, unless he somehow managed to figure out the secret plans of the other mages. And of course, he had no way of predicting spontaneous summons like Arturia and EMIYA.

Of course, he does go around town as dickworms eating people, so he might have found some things out on his own in the meantime.

Ciel, Shirou, and Satsuki both seem to have been born into non-magi families, so it seems possible.
