The Noble Phantasms are basically what defines them and their trump cards. Unless you go for exceptions or Casters, who rely mainly on magecraft/special conditions, you aren't going to find a lot of them.
Because throwing magic missiles everywhere is very different.

. The endless torrent of servants with super OP NP today just to make themselves a credible threat is wearing out on me. A ranked NP that can rip a single town in a thousand ways a handed out like candies and I have a feeling that this franchise is slowly turning into something akin to bleach.Spoiler:

Technically the fight escalating to the point where the Servants have to settle it by smashing their legendary weapons against each other as hard as they can with a flashy light show to go along with it is pretty much the prototypical climax. They both give it their all for a single moment and no one is quite sure who is going to be the winner until the dust clears.
And there's a big point to be made about how most of the Grail War is finding out who has what Noble Phantasm because not all Noble Phantasms work equally well in all situations.
