Why do characters often talk like it's something rare to have multiple NPs when most Servants have at least two?

I think my favorite example of this though is from Zero, where Saber's all "Which spear is his NP, it can't be both of them, a Servant having more than one NP is impossible"

It's entry in CM3 points out that it's really more of a spell than a NP. We have plenty of things that are classified as NP when they really aren't, though, like UBW and Tsubame Gaeshi.
