Could Avalon "heal" things like deafness or blindness?
I can see the excuse.

I don't want to say Avalon is alive, but it's kind of implied that Avalon has its own idea about how healing works. Like, I kind of doubt it would heal say, blackening, since black saber seems to be in Nasu's mind a possible path of hers, but on the other hand, I'm actually think it could handle something like gae dearg. This is something I could be wrong in seeing as how gae death would on save in zero, but as I understand it saber was not benifiting from Avalon because kiritsugu had it.
I don't know, it might have healed blackening too. Functionally blackening is basically just a curse and Avalon has been shown to be capable of healing cursed wounds from Gae Bolg. And in the Nasuverse, healing any curse is supposed to be the equivalent of overturning fate, which is pretty impressive.

And one last qeastion could a servant count enough as a wepon for Lancelot to use the, as one of his phantasms, since servants might as well be atonomus weapons.

The answer is no, because iirc correctly extra's gawain is about a specific timeframe, not just having light shine on him.

Na archers got to toughness, remaber, In fact he's more likely to live throu then Ilya.
I doubt lancelot will see a servant as a weapon. He probably needs to see the object and think, "Oh a weapon!" and not "Oh a servant, those are technically weapons anyway might as well swing him/her/it around!"
As for your second question, Archer can't do that anyway? Even if he could there's likely a limit and he still won't be super threatening because its all about dem NP's son
