Is the Grand Order being passed down through magi lineages only a thing in FGO timelines where Goetia uses it as a means to make sure his plan goes properly, or would it still be a thing in any old timeline, just with less demon god curses?

Question: Illya and Irisviel. Prior to the start or at the beginning of the Grail War, can they sense the servants being summoned?
I've already looked through Western Thuamaturgy, what is Eastern Magecraft like? I've come across some but not all on the wiki.
The wiki cites Fate/Royal Ace as a source for Servants qualifying for a bunch of alternate classes. How legit are these considered lore wise, and if it's not just gameplay fluff, is there any list of alternate classes it shows?
