If it was just the images that'd be one thing but the text also makes it pretty sensible. Hisui is a memory of playing in the shade, all the stuff focused on in the original Tsukihime. Kohaku is talking of sunlit dreams (the new attic stuff?) and then Akiha is a memory of being steeped in crimson (the hospital). Starting with Hisui lets you introduce all the old Far Side elements for a new audience and then get gradually more divergent as the game goes on. It's a pretty logical progression. Ciel Extra's epilogue also sets up Akiha and Satsuki as "heroine foils" in the same way Arc/Ciel and Hisui/Kohaku are so it makes sense to have their routes right next to each other.

Starting with Hisui is weird though because then you're getting into all of the Kohaku stuff in what would now be the middle two routes of the game, which would be pretty awkward. Of course, it's a pretty much a given that the Remake will bring substantial changes, so it's not like they couldn't make changes that would mitigate that awkwardness, but that logic makes discussion largely moot.

I mean by ending with Satsuki (let alone anything Nasu might be planning for Arc) you're already not ending with Kohaku anyway. It's a different vision for Tsukihime, not just a straightforward remake.

I remember something about that True Ancestors are born with their inherent power at its peak (or something like that) and can't improve their power while also having to use a vast portion of said power just to suppress their vampiric impulses. Dead Apostles, meanwhile, can evolve and become stronger by sucking blood.

Approximately,

Arcueid > Rank IX > Rank VIII > True Ancestors = Rank VII > Rank VI...

Or at least that's how Arcueid seems to represent it in the remake. The fallen TAs are probably slightly weaker than the Ancestors on average, but we don't have any exact statements to go off from.

Considering the other TAs used Arcueid to kill not only other fallen TAs, but also Dead Apostles, means that they probably needed that security. The DAs at some point made it a thing where they hunted down TAs. This was initiated by Ortenrosse, so at that point in time the DAs were definitely superior. That said, DAs can only become this powerful in Tsukihime worlds. In Fate worlds, the vampires that became the "Ancestors" in the Tsukihime worlds are only Rank VII at best, and they have not attained the same level of power. Even areas in which you would think they have a massive advantage, like magecraft, they actually have a drawback where they start to 'forget' how to use it after long periods of time. Well, if Van Fem is to be believed.

They most certainly do. CM is gone, but the TAs were already born by the point that he got owned by Zelretch. That said, Arcueid probably doesn't exist, since we have a single line from a Koha-Ace that says she's gone. Though it could just be that she's never tricked by Roa, and remains "pure" forever, much like her Asc3 from FGO. That said, considering how much her FGO profile pushes the idea that Asc3 is a possibility that never happened, rather than saying that she's the Arcueid of Fate worlds, I'd rather take the stand that she never existed in the first place.

If she existed in Fate worlds most of the plotlines in FGO would make no sense. As shown in MBBAN and MBAA AE takes direct action for way less than the stuff you see in FGO.
It's also stated worlds where Alaya is stable and worlds where Gaia manifests are opposite each other.

Faker is able to see all of space-time, past, present, and future when she ascends to the rank of a Divine Spirit in Case Files, if I recall correctly.

Ergo sees with the viewpoint of a god during the Van Fem arc as well.
Its described and portrayed as tracing the fate and fated relationships of someone as well as seeing the multiple routes they could take across time and space. Funnily enough, like a VN.
