"by that point" is clearly not enough time to go in jis vault of fuvkungeverything and search some anti-magic weapon.
He engaged him in a swordfight because he wanted to prove a point. He probably couldve won had he taken his axe instead.

He doesn't have to look for a particular NP if he knows what he wants to use. (See Merodach)
He does need to know exactly which one it is he wants to use, see Vasavi Shakti.
Not do anything because there's no flow of magic energy constantly keeping it in place. It seems more like their life span is determined at the time of projection and afterwards Shirou doesn't have to worry about them.
We are talking about the Yellow Rose of Exorcism, yes?
Araya, what do you seek?
「アラヤ、何を求める」
------True wisdom.「――――真の叡智を」
Araya, where do you seek it?「アラヤ、何処に求める」
Only within myself.「――――ただ、己が内にのみ」
Araya, what is your favorite color?「アラヤ、好きな色は?」
Blue. No, ora-- Auuuuuuuugh!「青、いや、オレンジイイイイイアアアっ!」
Ah, I see. Why would using Rho Aius hurt Archer so much then. He has to funnel power into it the entire time it's blocking Gae Bolg.
He never sleeps. He never dies.
Battle doesn't need a purpose; the battle is its own purpose. You don't ask why a plague spreads or a field burns. Don't ask why I fight.
Maybe that's a separate function from projection or maybe it's a result of him being so piss at anything other than swords. We never really hear of Shirou pouring power into his weapons after the fact to keep them functioning. It always seems like he just starts from scratch if something it wrong. Actually, the simplest explanation may be that Archer was reinforcing it, since reinforcing projections is a thing now.

"why didn't gil just use X" is a field of study broad enough to support a country

Except Saber's armor clearly doesn't work the same way as gradient air that's incredibly silly, mAc Chaos. Really what is and what isn't affected by Gae Dearg is defined as clearly as the difference between vermillion and crimson if you are also colorblind. Why do some things have flow and others do not and how did they decide?

Shirou's swords aren't Gradation Air. The whole point is he physically builds them as real objects inside his world and then pulls them out rather then making a fake hollow image out of prana. That's how he tricks the world into thinking it's the real deal.
Diarmuid's spear wouldn't do shit to them because they're not even magecraft at all. They're something that comes from magecraft, but so are all the servant's bodies themselves.
EDIT: On Prisma Illya's state in terms of canon, didn't the mangaka himself say it's basically just fanfiction (well, doujinshi I guess)?

Well I was corresponding to mentioned fact about pouring mana, it should at least cut the mana supply.
When we have shuffled off this mortal coil,
Must give us pause: there's the respect
That makes calamity of so long life;
I liked it better when meevanhelot had that obnoxious Archer avatar so I could get mad and disregard his posts without having to read them.
The whole point of him having a world full of materials is to pull off the loophole. It's explicitly not Gradation Air, it's putting shape to his imagination using the world inside him.
^It backfired on me because I actually really don't like Archer and so got sick of looking at his face.
