If excal was supposed to be one granting physical immortality, then avalon is just redundancy. Unless the difference is excal longevity=not dying of old age while avalon=heal cellular damage and degradation? Both immortality but works slightly different?
Excalibur's immortality bestowal is a carry-over of its predecessor, Caliburn, which is said to stop Artoria from aging physically, so that implies her appearance will remain as long as she possesses the sword. Avalon is basically described to grant Artoria invulnerability by making her "spill no blood and take no wounds". So both the sword and the sheath serve half of complete immortality; ageless and invincible.

If i understood it correctly Xians are, in nasuverse context, the genuine gods of chinese mythology similar to the greek machine gods instead of just divine spirits and it includes nature spirits like Yu and humans who ascend to godhood?
Yep gods like Konjiki Hakumen, elementals like Yu Meiren, and humans with underwent sage training like Taigong are all considered Xian.
If Illya has magic that lets people survive as just a severed head, why did she die from Gilgamesh's heart surgery? It probably would've also been useful for removing the crest worms in Sakura's heart that Kotomine couldn't without risking death in the HF route too yet she doesn't seem to use it.

Say you had two Servants, otherwise unrelated in nature - except for the fact that both have a story attached to them where they are the child of the Devil and regardless of how true or not that might have been in reality, as Servants at least they both are classed as partially demonic in nature. My question then is would these two people consider themselves as "siblings" or would the nebulous nature of the devil in the Nasuverse prevent that?

Konjiki hakumen is a weird as mixture..I believe she is everything including buddha, Xian and a deity

The Buddha part comes from her being Vairocana
