They're not actually 18. It's a running joke on account of the game having to claim everybody is 18 because of pornography laws. It's also probably why Nasu intentionally obfuscates the year the game is set and doesn't give years with the characters' birthdays, now that I think about it.

lol, they're jabbing you about the Mirror Moon all-depicted-people-are-18 thing. Rin just turned 17 at the beginning of FSN, Sakura is 15 going on 16, Shirou is 16 or 17, and I don't think Luvia has been given an exact age.

Also, it's officially senpai, but because of pronunciation issues, most people accept sempai as fine because it sounds really close.

Also, if you notice, not once does the game ever refer to the characters as "high school students", nor does it ever refer to what year they are in school. The classes and subjects are all really vague too.
Common sense tells us that Shirou and Rin are high school second years (Japanese eleventh graders), which makes Sakura a first year (Japanese tenth grader). But since the game itself gives no details on such things, it creates plausible deniability; if anyone accuses Nasu of writing porn with high school students, he can just go "Huh? But the text doesn't mention anything about high school students? :D" It's a silly loophole, but it's adequate for getting around the rules.
Compare to Tsukihime, where Shiki introduces himself as an "ordinary high school student" at one point in the game. Doujin games are exempt from the rules. But since becoming a proper company, TYPE-MOON has had exercise more care when dealing with such things.

^Fate folder is somewhere in my downloads folder, the extraction program is on my desktop. I didn't try that but I will. Although now I have that site which has pretty much every file.

Shurou's ones or a normal ones ? Shirou's ones (if it's a sword) are just part of himself, it just puts his internal world outside. So, as long as Shirou considers it perfect, it will stay intact. Gaia won't attack a human so neither will it attack something extract from a human. However, normal ones are not normally part of the World so Gaia will try to destruct them.
