On the other hand, isn't that how everyone imagines Gilgamesh fighting seriously, even before that scene shows up? Anything else would be less then serious, even if it lasted longer and was "more epic". Iskander is actually a threat (to whatever degree) and the surest way to victory happens to be a one action I win button. That's just how Gilgamesh's load out works.

Late, I know, but the reason she used Excalibur is because, if you'll remember earlier, Gil's armor tanked her normal slashes. It'd be pretty disappointing if she went through that Avalon gambit and hit Gil with a regular slash, only to have it bounce off his shiny metal ass. Funny, yeah, but she'd also be screwed.
^^^I don't see how that changes my point, if anything, it reinforces it.
Gil doesn't know how to deal with a fight for his life, to him getting serious is swinging a sword instead of snapping his fingers. He doesn't know how to deal with an actual fight, hence getting beaten handily by shirou.
He is a bit like a kid who hacked the system to make his stats all 9's. it's makes for easy fights, but up in a real match up, even one where he still has the avantage, it becomes very apparant he is just button mashing.

She does say that even if she gets past Ea, he'll still be able to defend if he has energy left. Since she's only going to have the one chance, the Excaliblast to the face was probably insurance to make sure that's impossible.
Or alternatively, she somehow knows what the Grail is really like (e.g. from the last War), so she was saving a big Excalibur blast for the Hole in the Sky. She could only spare a tiny Excalibur for Gilgamesh.
This is sort of foolish though. What if Gilgamesh did not die from the slash? What's the point of saving for another Excaliblast.

But why to-the-face?
To-the-face is so much more risk.
She seems to think hitting him is very important, she actually wastes another Excalibur getting close in on him, and, she was planning on setting it up waaaaay before it already happened. She actually says she needs to eat a round from EA to find the right spot, then later identifies the right spot at 8 meters. So it seems like she was always planning on charging and cutting him through.
Part vengeance, and also part wedding rejection?
Also, I kind of like how Gilgamesh went out in Fate. It was like, "eh, I lost, have fun and good luck Saber!" rather than his other deaths where he went full rage face.
It's the... uh... square cube law. As it applies to magical wave motion physics. As the slash travels, the volume covered gets larger, which exponentially decreases the power of the hit. Gotta smack 'em in the face to be sure!

Regular slash wouldn't get through his armour. Slash augmented with laser beam might.
